`Food and Nutrition Terms

21 June 2010 - Revision and collation of used terms in Lessons

1. Carbohydrates: Largest portion of meal, our staple food. Provides us with energy.
RDDA for teenage girls: 2150 kcal (a day)
Sources: Plants (e.g. wheat) - 6/7 servings a day
types: Starch Sugar
Bottom of food pyramid

2. Fructose - sugar in fruits

3. Moist heat on carbo - Gelantinisation
Methods: Boiling, Stewing, Steaming

4. Carcinogens: Cancerous Materials

5. Dry Heat (dry methods): Little or no oil, fast and healthy
On carbo: Dextrinisation
Toast: Starch is broken down to dextrins (the browning process)

6. Proteins: Provides energy, enables growth.
Builds new cells and muscles, maintain and repair cells.
Take in moderation: 66g a day (RDDA)
Sources: animals and plants
Congulation: Protein change into semi liquid state when heated
E.g. Cheese - high in salt and fat, not easily digestible
Made more digestibile by
a. grate/ chop
b. mix with starch foods (fat absorbed)
c. Do not overcook
d. Season well

7. Fats: most concentrated source of energy (9g per kcal) - provides nutrients
Keeps us warm, protects internal organs (padding), holds important organs
use polysaturated fat from vegetable origin (less/ no salt) - healthier, no cholesterol
Examples of fats: Butter, Margarine, Lard, Ghee
